Sweet Potato & Butternut Squash Soup (gluten free & vegan)

Nice warm soup is great on a cold day.  I recently purchased a Chiptole Sweet Potato soup from Le Pain Quotidien, and was in love.  I’ve heard that they are pretty easy to make, so I decided to try and make my own because paying over $6 for a soup is ridiculous.  I looked at a few recipes online for ideas, but ultimately decided just to create my own.

I’m currently obsessed with all things Fall, particularly root vegetables like yams, so I went with a “sweet potato” soup (which is really mostly yams).  Don’t know the difference?  Yams are orange and sweet potatoes are almost white.  They are both scrump. (Continued)

Pumpkin Bread

Pumpkin bread is definitely one of my favorite Fall foods.  It is moist and has a delicious spice.  It is very homey to me, and I find it really comforting.  I’d have to say Fall is my favorite season for this reason.

What’s also great about pumpkin bread is that it’s easy to make because it doesn’t require yeast.  It takes hardly any time at all to prepare the batter and while it’s baking in the oven your house will smell divine! (Continued)

Sugar n Spice Candied Nuts

I got this amazing recipe for “Sugar-and-Spice Candied Nuts” from Smitten Kitchen.  There’s always great things on that site, and this one was too.

I used the following nut combination:

  • 1/2 pound walnuts
  • 1/2 pound pecans
  • 1/4 pound almonds (Continued)

Morning Juice

So.  I bought a juicer and have been juicing for breakfast for 11 days now. I really like it.  I started out juicing pretty much every vegetable I’ve heard of in a juice: cucumber, kale, romaine, carrots, beets, lemon (shown above)…

Kicked-up Quesadillas

So I think pretty much everyone knows how to make a quesadilla, right?  You basically need two things: cheese and tortillas.  Well, let’s kick it up a notch, shall we?  I made my quesadillas this time with chicken, corn, black beans, shredded mexican-mix cheese & Alouette brie cheese spread.  I wasn’t sure how the cheese spread would taste, but it was surprisingly good!  Of course, you need some hot sauce too :) (Continued)

A Classic: Pound Cake

Pound cake is a classic.  It’s crumbly, but moist.  Sweet, but not too sweet.  It’s actually pretty easy to make, too!  Unfortunately, I can’t show you the texture this time because I took this pound cake to a family gathering and forgot to snap a photo of it once it was cut open! :(

I like my pound cake plain, with nothing on it.  Or…. toasted (in the toaster oven).  Or… some people might like some jam on it, or peanut butter.  It’s really pretty versatile. (Continued)

Almond Bread

What do you do when you have 10 bags of nuts lying around the house?  Google what you can make with nuts.  I also had some milk that I wanted to use up, so was looking for a nut + milk baking combo.  I found this Nut Bread Recipe, and adjusted to meet my “creative” needs. (Continued)

Restoring Hardware

In an attempt to refresh my kitchen, I decided to try to clean/restore the original hardware on our cabinets.  Above shows the “before” in the center and the “afters” on the sides.   You can see that there is a big difference in color.  However, when I put them back on the cabinets the overall effect was minimal.
